Fresh raw sea urchin is split in half, and has the internal organs cleanly removed while dipped in sea water, leaving the radiant orange sea urchin open on the spot! (Time required 15 or 20 minutes).

You can eat the best sea urchin of Rebun Island for 800 yen each.
